Chicken Kohlrabi Curry- Dinner From our Farm
Chicken kohlrabi curry
- 2 chicken breasts, diced
- 1 large or 2 small kohlrabi
- 2 cans coconut milk
- 1 small bottle Thai kitchen red curry paste
- 1 clove garlic, smashed and chopped
- 1 tsp cumin
- salt and pepper to taste
Place 1 can coconut milk in large stock pot. Add in diced chicken, garlic, and kohlrabi. Cook and stir for 5 minutes over medium heat.
Mix the other can of coconut milk with the curry paste in a bowl. Add to the mixture in the pot. Add spices.
Cook, stirring periodically, until kohrabi is tender, roughly 15 minutes.
Serve over rice.
