Chicken Kohlrabi Curry- Dinner From our Farm

Chicken kohlrabi curry

Ingredients
  

  • 2 chicken breasts, diced
  • 1 large or 2 small kohlrabi
  • 2 cans coconut milk
  • 1 small bottle Thai kitchen red curry paste
  • 1 clove garlic, smashed and chopped
  • 1 tsp cumin
  • salt and pepper to taste

Instructions
 

  • Place 1 can coconut milk in large stock pot. Add in diced chicken, garlic, and kohlrabi. Cook and stir for 5 minutes over medium heat.
  • Mix the other can of coconut milk with the curry paste in a bowl. Add to the mixture in the pot. Add spices.
  • Cook, stirring periodically, until kohrabi is tender, roughly 15 minutes.
  • Serve over rice.
