Kohlrabi Kale Soup- Dinner from our Farm

Kohlrabi kale soup

Ingredients
  

  • 2 tbsp butter or olive oil
  • 4 sausage links- bratwurst, polska kielbasa, or other sausage, casing removed, then cut in half and sliced
  • 1 clove garlic, smashed, or 1 tsp garlic powder
  • 1 large or 2 small kohlrabi, cubed
  • 1 large or 2-3 small potatoes
  • 1/2 cup white wine
  • 4 cups chicken bone broth
  • 1/2 bunch kale or chard
  • salt and pepper to taste
  • 1/2 cup heavy cream

Instructions
 

  • Heat oil or butter in a large stock pot.
  • Brown sausage in the pot for 5 minutes, on medium- low heat, stirring- don't need to be cooked all the way through.
  • Remove sausage to a plate and cover.
  • Add garlic to the juices in the pot. Simmer, stirring for a minute.
  • Add kohlrabi and potatoes. Stir, then cover and let steam for 5 minutes, still on medium low heat.
  • Add wine and stir, scraping up anything on the bottom of the pan. Recover and cook for another 10 minutes.
  • Add the stock and bring to a boil over medium heat. Simmer until potatoes and kohlrabi are cooked through.
  • Remove from heat and puree with an immersion blender or in a standing blender.
  • Place back in pot, add sausage and kale or chard and cook about 5 minutes. Salt and pepper to taste.
  • Remove from heat and stir in cream.
