Preheat oven to 325℉.
Mix eggs with salt and pepper in a bowl. Add cream and whisk until just blended.
In large pan, preferably well-seasoned cast iron, melt butter over medium low heat. Add onion, increase heat to medium, and stir until translucent.
Add ham and stir periodically for a minute. Use more ham if you want a meatier dish, less if you want an eggier dish.
Add kale and stir over heat for 5 minutes.
Remove from heat, pour eggs over the top of the yummy mix in the pan. Sprinkle grated cheese on top of the mix. Alternately, pour all ingredients into an oiled pie or baking pan.
Place in oven at 325 for approximately 25-35 minutes, knife should come out clean. Check often, as overcooked eggs aren't quite so delicious.
