Sautéed Arugula with spring garlic

Ingredients
  

  • 6 oz arugula
  • 3 stalks of spring garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp sesame oil (optional)
  • 1/4 cup chicken or veggie broth

Instructions
 

  • Wash arugula. Wash and slice spring garlic into tiny rounds.
  • Bring broth to a boil in a pan large enought to fit the arugula. Add sesame oil if you're using it.
  • Add salt, pepper, and garlic and stir a couple of times. Turn off heat.
  • Add arugula, stir to cover with broth.
  • Toss in the pan for a minute or two until the arugula is wilted.
  • Serving suggestions: on pasta, over mashed potatoes, on top of a salad, by itself as a side.
