Dinner from our farm- One pot Sautéed Swiss chard with Carrots!
We love chard in our family- delicious and nutritious, it’s amazing raw in a salad, and, we think, even more delicious cooked. Often, we’ll just saute chard with some olive oil, garlic, and shake some sea salt and pepper on, and everyone’s happy. Chard isn’t always easy to find in a grocery store, so if you’re new to local eating, chard might be new to you. It grows so well in Georgia, though, that it’s definitely something you want to learn to use in your kitchen. This is one of my family’s favorite recipes using ingredients you can find in the spring.
Some variations you can use when you realize how delicious it is and want to buy and eat (or grow and eat) all the chard:
Add oregano and basil, and throw some parmesan cheese in for the final stir.
Add polska kielbasa or Italian sausage, leave out the seasonings other than some salt and pepper, and throw the whole thing over pasta with some parmesan cheese.
Add bacon. Fry up first and add it in at the end.
Swiss Chard with carrots
Ingredients
- 1 bunch Swiss Chard
- 1 medium onion
- 4 medium carrots
- 2 tbsp olive oil
- 1 clove garlic
- 1/2 tsp red pepper flakes
- 1/2 tsp salt to taste
- 1/2 tsp pepper to taste
Instructions
- Wash chard and chop it roughly. Wash carrots, slice.Chop onion.Smash and mince garlic.
- Heat olive oil in a pan over medium heat. Add onions and saute for several minutes, until they're starting to soften and smell amazing.
- Add garlic, and stir a couple of times.
- Add carrots and stir frequently until carrots are how you want them cooked- 3-5 minutes.
- Add in the salt, pepper, and red pepper flakes. Stir until incorporated.
- Add chard. Turn off the heat. Place a lid on the pan. Stir after a minute or so. Re-lid, and stir again in a minute or so.
