Kohlrabi Kale Soup- Dinner from our Farm
Kohlrabi kale soup
- 2 tbsp butter or olive oil
- 4 sausage links- bratwurst, polska kielbasa, or other sausage, casing removed, then cut in half and sliced
- 1 clove garlic, smashed, or 1 tsp garlic powder
- 1 large or 2 small kohlrabi, cubed
- 1 large or 2-3 small potatoes
- 1/2 cup white wine
- 4 cups chicken bone broth
- 1/2 bunch kale or chard
- salt and pepper to taste
- 1/2 cup heavy cream
Heat oil or butter in a large stock pot.
Brown sausage in the pot for 5 minutes, on medium- low heat, stirring- don't need to be cooked all the way through.
Remove sausage to a plate and cover.
Add garlic to the juices in the pot. Simmer, stirring for a minute.
Add kohlrabi and potatoes. Stir, then cover and let steam for 5 minutes, still on medium low heat.
Add wine and stir, scraping up anything on the bottom of the pan. Recover and cook for another 10 minutes.
Add the stock and bring to a boil over medium heat. Simmer until potatoes and kohlrabi are cooked through.
Remove from heat and puree with an immersion blender or in a standing blender.
Place back in pot, add sausage and kale or chard and cook about 5 minutes. Salt and pepper to taste.
Remove from heat and stir in cream.
