Dinner from our farm- Roasted Beets
Roasted beets
- 3 beets
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp honey
- 1/2 tsp salt
Preheat oven to 425.
Grease the bottom of a baking sheet with 1 tbsp olive oil.
Peel and chop beets into roughly 1/2 inch cubes.
Toss beets in a bowl with 2 tbsp olive oil and salt.
Spread in single layer on baking sheet.
Bake for 20-30 minutes, or until beets are soft to touch, turning with a spatula every 10 minutes.
While beets are roasting, mix balsamic vinegar and honey in a bowl.
When you remove beets from the oven, drizzle them with the honey/vinegar mixture. Stir on the pan to coat.
Return to the oven and cook for 5 minutes. Stir, then cook for 5 more minutes.
Remove from oven.
