Elderflower and garlic salsa
Elderflower, raw garlic, raw apple cider vinegar (in the elderflower shrub)…sounds like a health food, right? So yummy with summer fresh tomatoes. We used produce from some of our farmer friends- seriously good.

Elderflower and garlic salsa
Ingredients
- 2-3 medium tomatoes about 2 cups, diced
- 1/2 small onion about 1/4 cup diced
- 1/4-1/2 jalapeƱo pepper, diced small 1/4 without seeds for less spicy, 1/2 with seeds for hot
- 2-3 garlic cloves, minced about 1 tablespoon
- 3 1/2 tbsp Elderflower Shrub Concentrate If you don't have elderflower shrub, you can mix 2 tablespoons elderflower syrup with 1.5 tablespoon apple cider vinegar
- 1 tbsp cumin
- pinch salt
- 1 tsp lemon juice
Instructions
- Cut and dice and mix in a bowl. Dip up with corn chips, carrots, cucumbers, kale chips, celery, or use your imagination.
