Easy Frittata recipe-use up your leftovers
With the cost of food going up, using leftovers in creative ways can really help keep the weekly grocery budget down. In my own kitchen, wasting less food keeps more money in our pockets. A frittata is basically a crustless quiche. An egg pie. A delicious, nutritious way to get dinner (and leftovers for lunch) using 1 bowl and 1 pan in under an hour, including cooking time. In addition, it’s a great way to use up leftovers in a way that turns them into something else completely. Leftover spring mix? Spinach about to go bad? No problem! If you want to turn this recipe into a quiche, simply use 9 eggs instead of 12, and put the ingredients in a pie crust. Here’s our favorite frittata recipe!
Ham and cheese frittata

2 tablespoons butter
12 chicken eggs or 8 duck eggs or 4-5 goose eggs (9 chicken eggs if making a quiche)
1/2 cup heavy whipping cream or non-dairy alternative
1/2 onion, diced
1-2 cups ham, diced
1-2 cups greens- spinach, kale, spring mix, chard, or broccoli, fresh or frozen, will do, roughly chopped
1-2 cups cheese, grated
salt and pepper to taste (1 tsp salt, 1/2 tsp pepper is a good start)
Preheat oven to 325℉.
Crack eggs into bowl. Admire the amazing color of pastured eggs.
Mix eggs with salt and pepper in a bowl. Add cream and whisk.
In large pan, preferably well-seasoned cast iron, melt butter over medium low heat. Add onion, increase heat to medium, and stir until translucent.
A word about the pan you use. It needs to be large enough to hold all the ingredients. It also needs to be able to go in the oven (no plastic parts!) Alternately, you can pour your ingredients into a large pie pan or other oven-safe pan.
Add ham and stir periodically for a minute. Use more ham if you want a meatier dish, less if you want an eggier dish.
Add green stuff, stir every so often for another 5 minutes.
Remove from heat, let cool for a couple of minutes, then pour egg mix over the top of the yummy mix in the pan. Sprinkle grated cheese on top of the mix.
Place in oven at 325 for 25-35 minutes. Insert a knife near the center, and it should come out clean. If there is a smear of liquid on the knife, place back in oven. Check at 25, and then check every 5 minutes until done. Overcooked or undercooked are not what you want.
Let cool a few minutes, then enjoy. Perfect accompanied with a salad. It’s also ok to just tell yourself that the salad is in the frittata, and eat it all by itself.
Frittatas are the ultimate in fast food. Mix and match with what you have on hand. If you keep the proportions the same, 1/2 onion, 1-2 cups of meat or hearty vegetables, 1-2 cups of green stuff, and 1-2 cups of cheese, you can’t go wrong. Since it’s an egg dish, make sure it’s cooked thoroughly, but not overcooked.
Leftover use-up options include:
Vegetarian- mushrooms and asparagus, peppers and broccoli, mix of cheeses, feta and olives, potato and onions, so many choices.
Cooked bacon, potato, spinach, and cheese
Cooked ground beef and potato
Leftover taco meat or beans, salsa and cheese, topped with a dollop of sour cream after cooking.
Seriously, if you have it in the refrigerator, chances are you can use it in a fritatta. And it will be amazing.

- 2 cup kale, broccoli or chard
- 1 1/2 cup cheddar cheese grated
- salt and pepper to taste

- Add kale and stir over heat for 5 minutes.
- Remove from heat, pour eggs over the top of the yummy mix in the pan. Sprinkle grated cheese on top of the mix. Alternately, pour all ingredients into an oiled pie or baking pan.
- Place in oven at 325 for approximately 25-35 minutes, knife should come out clean. Check often, as overcooked eggs aren't quite so delicious.
